Eat clean - pea guacamole


I have a thing for avocados. I love them. In salads, on toast, blended in smoothies.

And I loooooove guacamole.

Not the shop bought kind, it's just not quite right. No, the homemade kind. Made as chunky as you like, served up with crisp, salty tortillas and tucked into with gusto.

And according to Buzzfeed, and Batchelors, peas are having their moment and make a great addition to guacamole.

Really?

Well, I was definitely up for giving it a go!

You can make the same recipe base then decide what type of pea suits the type of guacamole you want.

There's mushy, for a smooth consistency, marrowfat 'bigga' peas if you like more texture or garden peas if you prefer chunky guacamole. They're all high in fibre, low in fat and half a can counts as one of your five a day.


I chose marrowfat this time around - my avocados were over ripe so good for mashing - and the results were pretty delicious indeed. Trust me.

So, I adapted my recipe for guacamole and made my take on pea guacamole...

What you need:

2-3 ripe avocados
1/2 - 2/3 tin of your chosen peas
3 small jalapeƱos
3 spring onions, whites only, sliced as thin as possible 
2 tablespoons packed parsley leaves, chopped, more for garnish (optional)
Zest of 1 lime
Juice of 1 lime
Flaky sea salt, for serving
Tortilla chips, for serving
Lime wedges, for serving

Method:

Cut your avocado in half, then score each half one way then the other. This leaves you with cubes you can gently push out into your bowl.



Mash with a fork, if soft enough, until you achieve the consistency you want. The more you mash, the smoother your dip will be.


Add your chosen peas then mash the mix together, again as much or as little as you want.


Slice your spring onions and add. Then slice up some jalepenos - three or four add a nice kick, but add more or less according to your preference.

Next, slice a lime in half and squeeze out the juice. Add some lime zest too if you can, it really helps enhance the flavour. I love limes, so the more, the better.


Sprinkle over some coarse salt, then stir it all together.


Your pea guacamole is good to go!

Scoop your guacamole into a separate bowl or into the middle of a big dish, surrounded by tortilla chips.

Decorate with some lime wedges.


Then dive in.


Even Ethan couldn't resist a dip.


I love the new twist to my recipe and adding peas is a great way to sneak in a few more good things. No-one will know.
