Family meals with quality ingredients from 44 Foods

I have really got into a rut when it comes to food and cooking; I've been making meals for all of us for so long, having been in lockdown and then continuing to work and stay at home most of the time, and I have run out of inspiration.

Until, that is, 44 Foods sent me all the ingredients needed to make a delicious Portugese Seafood Rice dish that was full of flavour and packed with lots of good things (#gifted).

So, who is 44 Foods?

They describe themselves as 'the UK's fairest food delivery service' with the aim of teaching the nation to cook using fresh, seasonal, sustainable British produce - and they invited me to give their latest recipe challenge a go.

I am so pleased I said yes as the quality of the food was great and the recipe went down with every one of us. We even had leftovers to enjoy for lunch the next day!

44 Foods is a nationwide grocery delivery service where they send you everything you need to make delicious recipes.

We bring the best farmers and producers in the country together in one place and deliver their fresh, restaurant quality food direct to your door. Explore our butcher’s, greengrocer’s, fishmonger’s, bakery and more to discover the finest seasonal produce.

Unlike some retailers, every 44 Foods purchase supports real British food producers in a fair and sustainable way.

Oh, one final thing. We never substitute products – we make sure you get what you order. Bye-bye random replacements, hello fabulous food.

The dish I made was really tasty and pretty easy to make, so I thought I would share it below in case I've given you some inspiration for dinner tonight:

Portuguese Seafood Rice

Serves 4

600g diced white fish

4 tbsp olive oil

150g raw prawns

1 onion, sliced

1 celery sticks, finely diced

3 cloves garlic, chopped

1 red pepper

3 large tomatoes, roughly chopped

2x 500ml cans of vegetable stock

400g Arborio rice

1 tbsp paprika (not smoked)

4 bay leaves

Salt and pepper to season

15g flat leaf parsley, picked and roughly chopped

1 lemon, wedged to serve

  1. Heat half the olive oil and fry the fish and prawns until just-cooked. Remove and season well.
  2. Add the remaining oil and fry the onion, celery, garlic and red pepper for 10 minutes, stirring well.
  3. Add the tomatoes and stock, then bring to the boil.
  4. Add the rice, paprika, bay leaves, salt and pepper, stirring well. Reduce the heat to very low, cover and simmer for 20 mins until the rice is cooked but still wet and soupy (add more stock or water if not).
  5. Add the fish and prawns, then heat through for 5 minutes.
  6. Scatter with parsley and serve in bowls, with lemon wedges.

I really enjoyed trying out 44 Foods and could not fault the quality or flavour.
