Super Saturday Sandwich

A quick post to get your tastebuds tingling, this super sandwich makes for the perfect brunch snack or lunchtime sandwich. It's not short on taste and there's plenty of good things in it too so it's not that naughty... really...!

Super Saturday Sandwich

Seeded bread roll, or other roll of your choice such as a sub

Cooked chicken breast chunks
Rashers of bacon - allow 2 per person, streaky is my favourite and M&S has ready to eat bacon which is lovely and crispy
Avocado - allow half per person
Cherry or plum tomatoes - I love the Santini ones from M&S, they cost more but they're worth it
Dijon mustard - 1 tsp per roll
Mayonnaise - 1 tbsp per roll

1. Spread the base of your roll with the mustard then the mayonnaise.
2. Layer the chicken then the bacon (cooked how you like it, make sure there's a little bit of crispiness for added flavour and texture).
3. Slice the avocado and slice the tomatoes in half and add to the sandwich.
4. Sprinkle of salt and pepper.
5. Dive in!
